Rhubarb Crumble Muffins
I found the recipe for these in an Australian Women's Weekly book which also has a recipe for Rhubarb and Custard Muffins. I went for Rhubarb Crumble, which have a layer of stewed rhubarb in the middle (from Grandad's garden) and are topped with a muesli based crumble topping. They were really yummy, the rhubarb was nice and sharp and was a nice refreshing addition to a very large muffin.
I think these could also work with stewed apples, maybe with some cinnamon for apple crumble muffins, or even peaches in the summer with a mound of whipped cream on top.
With summer coming to an end, we are faced with the usual glut of fruit from Grandad's garden, and currently have a freezer full of rhubarb. As it's also one of my Mum's favourites, I decided to make another rhubarb based treat:
Rhubarb Custard Melting Moments
These are rather like a custard over dose, with as much custard powder as flour in the biscuit, and a custard and stewed rhubarb filling. Mum liked them a lot, and they do have a really nice crumbly viennese whirl-like texture. They also look really pretty as the rhubarb turns the custard pink!

In other news, I won the vintage style handkerchiefs so will very soon have tissue holders everywhere, and I've spent a large part of the day making jam for Christmas presents (I know it's only September, but it's no good trying to make strawberry or blackberry jam in November!)
